Spicy Ginger Cocktail: The Dark and Stormy

What do you think of when you hear "dark and stormy?"


Or maybe...


No? Just me?

I know of another dark and stormy, one that involves rum and ginger. It can be found at Ruckus (you know, the place with the garlic knots...) or at your house if you are up for making ginger simple syrup.

You will need sugar, water and ginger root.... simple is in the name for a reason.

This drink is spicy and not too sweet. It is delicious. Plain and simple.

Dark and Stormy Cocktail
(serves one)
2 oz dark rum
seltzer water
dash of bitters
fresh ginger, a 3" piece coarsely chopped
2 c sugar
1 c water

1. Make ginger syrup: In a small pot, combine sugar, water and ginger pieces; boil until slightly reduced and of a syrupy consistency (I let mine simmer for about 20 minutes). Using a muddler, smash steeping ginger and allow syrup to cool completely. Extra syrup can be stored in a squeeze bottle for further use, just keep covered with a lid or plastic wrap.
2. Make your drink: Add ice to a rocks glass then add rum and bitters. Top with club soda add syrup to taste. Mix well.
