chocolate-chocolate chip muffins

Muffin-cakes for your face.  





These are equally delicious with a quick raspberry sauce for dessert or au naturel for breakfast. If you are a fan of the Costco muffin, you will be all over these. 


Chocolate-Chocolate Chip Muffins
makes 24 small or 12 jumbo muffins

1/2 c (1 stick) unsalted butter, soft
1 c brown sugar, packed
1/2 c granulated sugar
1 large egg
1 cup buttermilk
1 t vanilla extract
1 1/2 c AP flour
3/4 c cocoa powder
1/4 t baking soda
1/2 t baking powder
1/4 t kosher salt
1 c chocolate chips

*pre-heat oven to 350
1. In a stand mixer with the paddle attachment cream butter and sugars
2. Add egg, vanilla and butter milk and mix on low until incorporated (mixture will appear broken- no worries)
3. Sift dry ingredients into mixing bowl and fold them in using a wooden spoon
4. Fold in chocolate chips
5. Spoon batter into muffin cups fitted with paper liners (this recipe will yield 24 small or 12 jumbo muffins)
6. Place muffin tin in the pre-heated oven and immediately turn it down to 325 degrees
7. Bake for 23-27 minutes for small muffins, 30ish minutes for jumbo (they are done when the tops spring back when pressed lightly)
